
Breakfast Burritos

1/2 cup diced cooked ham
1/3 cup diced tomatoes
1/4 cup chopped onion
1 cup shredded monterey jack cheese
1 cup shredded cheddar cheese
4 scrambled eggs, optional
4 flour tortillas, warmed
Place the ham, tomatoes, and onion in the crock pot. Cover the crock pot and cook on low for 1 hour or until heated through.
Turn the crock pot to high heat. Stir in the cheeses. Mix well. Cover the crock pot and cook on high for 15 minutes or until the cheese has melted.
If desired, add scrambled eggs when you add the cheese.
Fill warmed tortillas with the breakfast burrito filling. Serve immediately.
