
Baked Pineapple

2 tablespoons cornstarch
1/4 cup water
2 eggs, beaten
1 can (15.25 ounce size) crushed pineapple, undrained
1/2 cup sugar
1 teaspoon vanilla extract
butter
ground cinnamon
Combine cornstarch and water, stir until smooth. Add eggs and blend well. Add pineapple, sugar and vanilla, mix well.
Pour into a lightly greased 1 1/2 quart casserole dish, dot with butter and sprinkle with cinnamon. Bake at 350 degrees F for 1 hour.
