Ingredients: 1/2 cup unsifted all purpose flour 1 cup nonfat dry milk powder
Directions: Place the ingredients in a 1 pint jar, cover tightly, and shake well to mix. Store in the refrigerator for up to 4 weeks. Use for making cream sauces and gravies as directed below.
TO MAKE THIN WHITE SAUCE OR GRAVY: In a small heavy saucepan, blend 1/4 cup Basic white sauce mix with 1 cup water, low sodium chicken broth or low sodium beef broth. Set whisking constantly. Cook, uncovered, stirring often, until the sauce thickens--about 1 minutes. Season to taste with salt and pepper. Do not allow the sauce to boil or it may curdle. Makes about 1 cup.
TO MAKE MEDIUM WHITE SAUCE OR GRAVY: Use 1/2 cup basic white sauce mix and 1 cup water, low sodium chicken broth or low sodium beef broth. Proceed as directed above. Makes 1 cup.
