Dijon And Garlic Roasted Potatoes

ingredients
3 pounds small potatoes, scrubbed but unpeeled, cut into halves
1/4 cup olive oil
1/4 cup Dijon mustard, or to taste
2 tablespoons minced garlic, to taste
3 tablespoons dried parsley flakes
1 tablespoon kosher salt
1 teaspoon coarse ground black pepper
directions
Preheat oven to 400 degrees F.
Toss all ingredients together in a large bowl. Spread the potatoes in a shallow baking pan (disposable aluminum pans work great) in a single layer (you may need two pans).
Roast the potatoes about 40-50 minutes, carefully turning them occasionally with a spatula, until tender.

My potatoes were a little large so I quartered them. They roasted beautifully and had so much delicious flavor. I thought the mustard might be too strong but it was just the right amount for the amount of potoatoes and other ingredients.

These potatoes are WONDERFUL! The only thing I added was a 1/4 cup of mayo to the mixture (only because I was afraid they would be too salty, but they weren't.) Covering a cookie sheet with foil works great. The are the best potatoes ever!

Yummy potatoes! These smelled so good baking! Much healthier than roasted potatoes with butter or oil :)
