Cajun Catfish With Red Beans And Rice

ingredients
4 catfish fillets (4 to 5 ounce each)
2 cups cooked rice
1 can (15.5 ounce size) light red kidney beans, drained and rinsed
1 can (14.5 ounce size) Cajun stewed tomatoes
3 teaspoons Cajun seasoning
1/4 cup sliced green onions
directions
Preheat oven to 450 degrees F or grill to medium-high.
Center one catfish fillet each on sheet of aluminum foil with non-stick (dull) side toward food. Combine rice, beans, tomatoes and Cajun seasoning; spoon over catfish.
Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make rest of packets.
Bake 14 to 18 minutes on a cookie sheet in oven or grill 10 to 12 minutes in covered grill. Sprinkle with onions before serving.
