Italian Chicken Pita

ingredients
3/4 pound boneless, skinless chicken breast, cut into thin 1" slices
1 small zucchini sliced
1 small carrot, grated
1 small onion, sliced in rings, then halved
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon black pepper
1 medium tomato, chopped
3 pita pocket breads (6 inch size), warmed and halved
1/3 cup shredded mozzarella cheese
directions
Stir fry chicken with non-stick cooking spray until cooked and no longer pink inside. Add zucchini, carrot, onion and seasonings (add a little water if needed).
Stir fry for 2-3 minutes until crisp tender. Remove from heat and add tomato just before filling warmed pocket breads. Sprinkle fillings with cheese.
