French Country Potato Salad With Smoked Sausage

3 tablespoons white wine vinegar
2 tablespoons Dijon mustard
1 tablespoon minced fresh rosemary
2 cloves garlic, minced
1/8 teaspoon ground allspice
6 tablespoons olive oil
kosher salt and freshly ground black pepper
12 small red potatoes (about 2 pounds), scrubbed
1 small leek, including pale green parts, halved lengthwise, well-rinsed and chopped
1/2 pound smoked sausage cut into rounds 1/4-inch thick.
2 ounces Roquefort cheese, coarsely crumbled
fresh rosemary sprigs for garnish

In a bowl, whisk together white wine vinegar, mustard, rosemary, garlic and allspice in a small bowl. Gradually whisk in the olive oil. Season to taste with kosher salt and pepper.
In a large pot of salted boiling water, cook unpeeled whole potatoes until tender when pierced with a small knife, about 20 minutes. Drain and let stand until cool to the touch, about 15 minutes. Peel potatoes and cut them into rounds 1/3-inch thick.
Put potatoes in a large bowl and add 1/4 cup dressing. Toss gently to coat, separating potato slices. Stir in leek, then sausage and remaining dressing. Stir in cheese and season to taste with black pepper and kosher salt. Transfer to a serving bowl and garnish with rosemary sprigs.
