Scampi With Red Bell Peppers

ingredients
3/4 cup butter
2 red bell peppers, seeded, cut into 2-inch long, 1/2-inch wide strips
3/4 pound unpeeled zucchini, cut into 1/2-inch rounds
3/4 cup chopped shallots
1/4 cup finely chopped fresh garlic
2 tablespoons drained capers
1 pinch crushed dry red pepper flakes, or to taste
2 pounds large uncooked shrimp, peeled, deveined, large tails left intact
1/3 cup chopped fresh basil
directions
Melt butter in heavy large skillet over high heat. Add bell peppers, zucchini, shallots and garlic; saute until shallots begin to soften, about 4 minutes. Mix in capers.
Transfer mixture to large baking dish or gratin dish (Can be made 4 hours ahead). Cool completely. Cover and set aside.
Heat oven to 450 degrees F. Mix shrimp into vegetables. Bake until shrimp are cooked through, stirring occasionally, about 10 minutes.
Add salt and pepper to taste. Sprinkle with basil. Serve hot.
