
Chocolate Wafer Ice Cream Sandwiches

30 round chocolate wafer cookies
1 quart ice cream, softened
1 package (12 ounce size) mini chocolate chips
Place half of the cookies, flat side up, on a baking sheet.
Top each wafer with a small scoop of ice cream. Quickly top the ice cream with another wafer, flat side down.
Gently press down on the top wafers to spread the ice cream to the edges. You can run a knife around the edge to smooth the sides, if needed.
Place the baking sheet in the freezer and freeze the ice cream sandwiches for 1 hour or until firm.
Place the miniature chocolate chips in a shallow dish. Roll the sides of the ice cream sandwiches in the mini chips so any exposed ice cream is coated in the chips.
Serve the ice cream sandwiches immediately or freeze in an airtight container until ready to serve.
