
Turkey Couscous Meatloaf

1 1/2 pound ground turkey
1 package (10 ounce size) frozen chopped spinach
1 can (15 ounce size) fire roasted diced tomatoes, drained
1 package (6 ounce size) couscous with seasoning packet (any flavor)
1 1/4 cup boiling hot water
1 egg
seasoned pepper and salt, to taste
Heat oven to 375 degrees F.
Combine couscous and water and set aside. When all water is absorbed, lightly fluff with a fork.
Cook the spinach as directed on package. Drain very well, pressing out as much of the water as possible.
Combine the turkey, egg, seasoning packet from couscous, seasoned pepper and salt, drained spinach and half the tomatoes. Stir in the couscous.
Place mixture in a loaf pan and top with remaining tomatoes. Bake for 1 hour or until meatloaf registers 160F on a meat thermometer.
Cook's Notes: This is a lovely, light meatloaf with lots of flavor. Try different flavored couscous (we used roasted garlic). The couscous is a nice change from the oatmeal or breadcrumb based meatloaf recipes.
