Soft Shell Tacos

Ingredients:
8 flour tortillas
2 tablespoons diced onion
1 pound ground beef
1 package taco seasoning mix
3 tablespoons water
1 tomato
1/4 head lettuce
1 cup shredded Mexican-style Cheddar cheese
salsa (optional)

Directions:
Preheat oven to 300 degrees F. Wrap tortillas in foil and heat while meat is cooking.

Preheat saute pan on medium-high for 2-3 minutes. Place onions and crumbled ground round into pan, breaking into small pieces as it browns. Continue to cook until browned.

Drain liquid from pan. Add seasoning mixture and water; simmer for 5-10 minutes on low heat.

While meat is cooking, chop tomato and shred lettuce.

Remove tortillas from oven. Assemble tacos, filling each with a portion of beef. Top each with cheese, lettuce, tomato and salsa (if desired).
