Ingredients: 1 cup dried lentils, sorted and rinsed 2 cups water 3 medium stalks celery, chopped 3 medium carrots, chopped 1 large onion, chopped 3/4 cup ketchup 2 tablespoons dark brown sugar 2 tablespoons Worcestershire sauce 2 tablespoons cider vinegar 5 pita breads (6" size), cut in half to form pockets
Directions: Heat lentils and water to boiling in 2 quart saucepan, then reduce heat. Cover and simmer for 10 minutes.
Mix celery, carrots, onion, ketchup, brown sugar, Worcestershire sauce and lentils with water in a 3 1/2 to 4 quart slow cooker. Cover and cook on LOW for 10-12 hours or until hot. Just before serving, stir in vinegar.
Fill each pita bread half with 1/2 cup lentil mixture.
