Directions: Preheat the oven to 350 degrees F. Grease a 9x13 baking dish.
Cook the lasagna noodles as directed on the package. Drain well and set aside.
Meanwhile, heat the oil in a large skillet over medium-high heat. Add the onion and cook, stirring frequently, until soft.
Add the crumbled beef substitute and spaghetti sauce. Mix well then cover the skillet and reduce the heat to a low simmer. Let cook, stirring occasionally, for 10 minutes.
Place a very thin layer of the spaghetti sauce mixture in the bottom of the baking dish. Top with three of the cooked lasagna noodles in a single layer. Spread 1/3rd of the spaghetti sauce over the noodles. Top with half of the cottage cheese and then sprinkle with 1/3rd of the Mozzarella. Repeat the layers ending with the Mozzarella. Sprinkle with the Parmesan.
Place the baking dish in the oven and bake at 350 degrees F for 30 minutes or until bubbly in the middle and the cheese is melted.
Remove the lasagna from the oven and let stand for 10 minutes before slicing and serving.
