Ingredients: 1 pound smoked sausage, sliced 2 boneless, skinless chicken breasts, cubed 1 tablespoon olive oil 2 stalks celery, diced 1 can (28 ounce size) diced tomatoes with peppers and onions 1 bag (16 ounce size) frozen chopped okra 2 cans fat-free chicken broth Old Bay seasoning, to taste 3 cups cooked rice, optional
Directions: In oil, cook chicken add sausage to brown. Add celery. Once meat is cooked, add all other ingredients but rice. Let simmer about 20 minutes.
If you wish to add rice, do so now. Cover and cook additional 20 minutes.
