
Barts Exquisite London Broil

***Onions***
2 medium white onions, thinly sliced
1 teaspoon salt
2 tablespoons unsalted butter
***Basting Sauce***
2 tablespoons oil
1 teaspoon fresh lemon juice
2 cloves garlic, crushed
***Steak***
1 pound beef flank steak
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
Preheat the broiler.
In a saucepan over medium heat, add the onions, salt, and butter. Cook, stirring, until the onions are soft. Reduce heat to very low to keep the onions warm while you prepare the steak.
Score the steak 1/8-inch deep on both sides.
Combine the oil, lemon juice, and garlic in a small bowl. Using a basting or pastry brush, brush one side of the steak with the mixture.
Place the steak, seasoned side up, on a broiling pan. Sprinkle as desired with salt and pepper. Place under the broiler about 3 inches from the heat and cook for 5 minutes.
Turn the steak over and baste the other side with the oil mixture. Return to the broiler and let cook for 5 minutes.
Remove from the oven and place the steak on a cutting board. Let stand for 5 minutes then slice across the grain into thin slices.
To serve, place slices of the steak on individual plates and top with some of the sauted onion mixture.
