
Cajun Cornish Hens

1/4 teaspoon cayenne pepper
1 teaspoon seasoned salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried thyme, crushed
1 teaspoon dried oregano, crushed
1/2 teaspoon paprika
1/2 teaspoon black pepper
4 Cornish hens (1 to 1 1/2 pound size)
2 tablespoons olive oil
Preheat the oven to 400 degrees F.
Combine the cayenne, seasoned salt, garlic powder, onion powder, thyme, oregano, paprika, and black pepper in a bowl. Mix well.
Dry the cornish hens with paper towels. Brush the skin thoroughly with the olive oil. Sprinkle the seasoning mixture evenly over the hens, making sure to get all sides.
Place the hens breast side up in a baking pan and place in the oven.
Bake at 400 degrees F for 45-60 minutes (depending on size) or until they register 165 degrees F with a meat thermometer.
Remove the cornish hens from the oven and let stand for 5 minutes before serving.
