Ingredients: 2 cups sugar 1/4 cup butter, softened 4 eggs 1/4 cup all-purpose flour 1 can (8 ounce size) crushed pineapple, well drained 1 cup coconut 1 teaspoon vanilla extract 1 unbaked pie shell (9-inch size)
Directions: Preheat the oven to 325 degrees F.
Combine the sugar, butter, and eggs in a mixing bowl. Beat on medium speed with an electric mixer until well mixed. With the mixer running, add the flour and vanilla and mix until incorporated.
Stir the pineapple and coconut into the filling by hand. Pour the pineapple mixture into the unbaked pie shell. Place the aloha pie in the oven and bake at 325 degrees F for 1 hour or until set.
Remove the pie from the oven and let cool on a wire rack before slicing and serving.
