Ingredients: 1 cup sugar 3 tablespoons shortening 3 eggs 4 1/2 cups flour 4 1/2 teaspoons baking powder 1 teaspoon grated nutmeg 1 teaspoon salt 1 cup milk
Directions: In a mixing bowl, cream together the sugar and shortening with an electric mixer until completely blended. With the mixer running, add the eggs one at a time and beat until each is incorporated.
Sift together the flour, baking powder, nutmeg, and salt. With the mixer running, alternately add the milk and flour mixture to the egg mixture. When the mixture gets too thick, mix by hand.
Lightly flour a work surface and transfer the dough to it. Roll it out to 1 1/4-inches thick and cut as desired into donuts (you can do donuts and holes or remix the dough and recut it).
Heat several inches of oil in a deep fryer or deep pan to 365 degrees F. Add the donuts in batches and cook, turning as needed, until golden brown on both sides. Remove from the oil with a slotted spoon and let drain on paper toweling.
Donuts can be left as is, coated with powdered sugar, or glazed.
Some people like to add a little lemon juice to the donut batter as they believe it helps prevent the donuts from absorbing too much oil.
