
Broccoli, Chicken, And Cheese Casserole

2 packages (10 ounce size) frozen broccoli
3 cups chopped, cooked chicken
2 eggs, lightly beaten
1/2 cup shredded cheese (your choice)
1 can (10.75 ounce size) cream of mushroom soup
1/2 cup mayonnaise
1 small onion, chopped into small pieces
4 tablespoons butter, melted
32 Ritz crackers, crumbled
Preheat the oven to 400 degrees F. Lightly grease a 2-quart baking dish.
Cook the broccoli as directed on the package. Drain well.
In a large bowl, gently stir together the cooked broccoli, chopped chicken, eggs, cheese, cream of mushroom soup, mayo, and onion. Mix completely then spoon the mixture into the prepared baking dish.
In a small bowl, stir together the melted butter and cracker crumbs until the crumbs are covered in the butter. Evenly spread the crumb mixture over the top of the baking dish.
Place the baking dish in the oven and bake at 400 degrees F for 15-20 minutes or until bubbly in the center. Serve hot.
