
Hawaiian Chicken

2 pounds boneless, skinless chicken breast halves
1 can (16 ounce size) pineapple chunks, drained
1 can (15 ounce size) mandarin oranges, drained
1/4 cup cornstarch
1/4 cup brown sugar, packed
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon ground ginger
Place the chicken breasts in the crock pot.
In a bowl, mix together the fruit, cornstarch, brown sugar, lemon juice, salt, and ginger. Pour the fruit mixture over the chicken.
Cover the crock pot and cook on low heat for 4-5 hours or until the chicken is cooked through. Can also be cooked on high heat for 2-3 hours.
Serve the chicken with the fruit sauce over steamed rice.
