
Ethyl's Restaurant and Smokehouse Smoked Porter (Beer) And Cheese Soup

1/2 cup unsalted butter
1/2 cup flour
3 cups milk
2 cans (14.5 ounce size) chicken broth
5 cloves garlic, minced
1 1/2 cup smoked porter beer
1 pound sharp Cheddar cheese, shredded
1/2 teaspoon salt
freshly ground black pepper
1/2 pound smoked sausage, diced
4 green onions, thinly sliced
Combine butter and flour in a large saucepan over medium heat; cook, whisking, until mixture is golden, about 5 minutes.
Slowly whisk in milk; cook, stirring, until thick, about 5 minutes. Whisk in chicken broth; add garlic and beer. Reduce heat to low. Cook, stirring often, 30 minutes.
Stir in cheese; cook, stirring, until cheese melts, about 5 minutes. Stir in salt and pepper to taste. Garnish with sausage and green onions.
