
Blueberry Ricotta Ice Cream

2 cups fresh blueberries
8 ounces part-skim ricotta cheese
8 ounces low fat cottage cheese
1/3 cup honey
1 tablespoon vanilla extract
Rinse and dry the blueberries, removing any stems.
Combine the ricotta cheese, cottage cheese, honey, and vanilla in a food processor. Process until smooth.
Add the blueberries and process until well pureed.
Transfer the mixture to the canister of an ice cream machine and process as directed by the machine manufacturer. Store any leftover ice cream in an airtight container in the freezer.
