Frozen Lemon Squares

Ingredients:
1 1/4 cup graham cracker crumbs
1/4 cup sugar
1/4 cup butter or margarine, melted
3 egg yolks
1 can (14 ounce size) sweetened condensed milk (not evaporated milk)
1/2 cup lemon juice
yellow food coloring (optional)
Whipping cream, whipped or whipped topping

Directions:
Preheat oven to 325 degrees F.

Combine the graham cracker crumbs, sugar, and melted butter in a bowl and mix well until the crumbs are coated with the butter. Press the crumb mixture into the bottom of a 8-inch square baking pan and set aside.

Combine the egg yolks, sweetened condensed milk, lemon juice, and food coloring (if using) in a mixing bowl. Beat on medium speed with an electric mixer until frothy. Pour the filling slowly over the graham cracker crust.

Place the pan in the oven and bake at 325 degrees F for 30 minutes or until the filling is set.

Remove the pan from the oven and let cool completely on a wire rack. When cool, spread whipped cream evenly over the top of the filling. Cover the pan with aluminum foil and place in the freezer for 4 hours or until firm.

Remove the pan from the freezer 10 minutes before serving. Cut into squares to serve.

Store leftovers in the freezer.
