
Root Beer Pie

12 ounces root beer, chilled
1 cup light corn syrup
1/4 cup dark brown sugar
2 tablespoons butter, melted and cooled
2 tablespoons flour
1 cup chopped pecans
3 eggs
1 prepared pie crust
1 egg white, beaten
pecan halves, for garnish
Preheat oven to 375 degrees F.
Place the root beer in a saucepan and bring to a simmer over medium heat. Let simmer until the liquid is reduced to a syrupy consistency. Remove from heat and let cool slightly.
In a bowl, combine the root beer syrup, corn syrup, brown sugar, melted butter, flour, and chopped pecans with a whisk until completely mixed.
In another bowl, beat the eggs then stir into the root beer mixture.
Lightly prick the pie crust with the tines of a fork. Brush the crust evenly with the beaten egg white. Pour the pie filling into the shell. Arrange the pecan halves on top.
Place the pie in the center of the oven and bake at 375 degrees F for 40 minutes or until a knife stuck in the center of the pie comes out clean.
Let cool before slicing and serving.
