Ingredients: 2 tablespoons vegetable oil 4 cups fresh snow pea pods, trimmed 2 cups red bell pepper strips 2 cups broccoli florets 1 cup shredded carrots 1/4 cup chopped green onions 2 teaspoons fresh grated ginger 1/2 teaspoon dried crushed red pepper 4 cloves garlic, pressed or minced 1/4 cup soy sauce 2 tablespoons water 12 ounces vermicelli pasta, cooked 3 teaspoons dark sesame oil
Directions: Heat the oil in a wok or large non-stick skillet over medium-high heat. Add the snow peas, bell pepper, broccoli, carrots, green onion, ginger, crushed red pepper, and garlic. Stir fry until crisp tender, about 3-4 minutes.
Stir in the soy sauce and water and mix to coat the vegetables. Add the cooked pasta and toss it and the vegetables in the soy sauce mixture.
Remove the wok from heat. Drizzle the stir-fry with the sesame oil and lightly toss to mix. Serve hot.
