
Quick Leftover Spanish Rice

2 tablespoons olive oil
1 onion, diced
3 cloves garlic, minced
1 cup diced green bell pepper
3 cups cooked rice
1 cup tomato sauce, plus more if needed
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon freshly ground black pepper
1 dash cayenne pepper
Heat the oil in a large skillet over medium heat. Add the onion, garlic, and bell pepper. Cook, stirring frequently, until the onion and bell pepper are soft.
Add the rice to the skillet and cook for 2-3 minutes, stirring constantly, or until the rice is fully mixed.
Add the tomato sauce, salt, paprika, black pepper, and cayenne. Bring to a simmer and cook until most of the sauce is absorbed.
Serve the Spanish rice hot.
