
Pineapple Ham Stir Fry

1 can (14 ounce size) pineapple chunks, drained, reserve juice
2 tablespoons orange juice
2 tablespoons white vinegar
2 tablespoons soy sauce
1 tablespoon cornstarch
1/4 teaspoon garlic powder
1/4 teaspoon crushed red pepper
1/4 teaspoon ground ginger
1 tablespoon oil
2 1/2 cups assorted fresh or frozen vegetables
6 ounces chopped ham
Combine the drained juice from the pineapple, orange juice, vinegar, soy sauce, cornstarch, garlic powder, crushed red pepper flakes, and ginger in a bowl. Whisk until smooth then set aside.
Heat the oil in a large wok or skillet over medium-high heat. Add the vegetables and cook, stirring constantly, until desired tenderness.
Add the sauce to the wok. Cook, stirring constantly, until the sauce has thickened.
Add the ham and pineapple chunks to the wok and stir until heated through.
Serve the pineapple-ham stir-fry over cooked rice, if desired.
