
Instant Pot Pork Chops and Rice

2 tablespoons oil
8 pork chops, cut 1/2 inch thick
2 cups rice, uncooked
4 cups chopped tomatoes
2 teaspoons salt
1/2 teaspoon black pepper
1/2 teaspoon chili powder
4 tablespoons chopped onion
6 tablespoons chopped green bell pepper
2 cups water
Using the saute function, heat the oil in the pressure cooker. Add the pork chops, in batches, and cook until brown on both sides. Remove them from the pressure cooker and keep warm.
Add the rice to the hot oil. Cook, stirring constantly, until it starts to brown. Stir in the tomatoes, salt, pepper, chili powder, onion, and green pepper. Mix well.
Place the pork chops on top of the rice mixture. Add the water.
Put the cover in place and set the pressure cooker to cook for 9 minutes. Use the quick release method when time is up.
