
Garlic Chicken Wings

2 pounds chicken wings
3 heads garlic
1 cup olive oil
2 teaspoons hot pepper sauce
1 cup grated Parmesan cheese
1 cup fine seasoned bread crumbs
1 teaspoon black pepper
Preheat the oven to 375 degrees F. Generously grease a large baking pan or rimmed baking sheet.
Cut the chicken wings at the joints, discarding the tips. Pat the wing sections dry with paper toweling.
Separate the garlic into individual cloves and peel off the papery skin. Coarsely chop the cloves then add to a food processor along with the olive oil and hot sauce. Process until smooth, scraping down the sides as needed. Transfer the garlic mixture to a shallow dish.
In another shallow dish, mix together the Parmesan cheese, breadcrumbs, and black pepper.
Dip each wing first into the garlic mixture, coating completely and letting any excess drip off. Then roll in the breadcrumb mixture, pressing gently so the crumbs adhere to the wings. Place the wings in the greased baking pan in a single layer.
Place the baking pan in the oven and bake at 375 degrees F for 50-60 minutes or until the wings are crisp and cooked through.
Serve hot with your favorite dipping sauce.
