
Spinach Gnocchi

1 package (10 ounce size) chopped frozen spinach, thawed and squeezed dry
2 egg yolks
1 package (14 ounce size) ricotta cheese
1 teaspoon ground nutmeg
salt and pepper to taste
1 cup all-purpose flour, or as needed
Combine the spinach, egg yolks, ricotta, nutmeg, salt, and pepper in a large bowl. Mix well. Add the flour a little at a time until a soft dough forms.
Flour a work surface. Roll small amounts of the dough into ropes about 3/4-inch in diameter. Cut the ropes into 3/4-inch long pieces. Gently roll a fork over each piece to create ridges, or simply create an indentation in each with your thumb.
Let the gnocchi rest while you bring 4 quarts of salted water to a boil over medium-high heat.
Drop the gnocchi into the water, in batches as needed, and let cook for 5 minutes. Remove the cooked gnocchi with a slotted spoon and keep warm in a covered bowl or serving dish.
Serve the gnocchi with your favorite pasta sauce or with butter and grated cheese or use in another recipe.
