Ingredients: 3/4 tablespoon salt 1/4 cup fresh lemon juice 2 cups pumpkin seeds
Directions: Combine the salt and lemon juice in a bowl and mix well. Stir in the pumpkin seeds and mix until everything is combined and the seeds are completely coated with the salt mixture.
Remove the pumpkin seeds from the salt mixture with a slotted spoon and place them in an even layer on a microwave safe plate.
Microwave on HIGH for four minutes. Stir the seeds and spread them out in an even layer again and place back in the microwave for another 2 minutes on HIGH.
Repeat (stirring, then cooking 2 minutes) until the pumpkin seeds are golden brown. Let cool then store in an airtight container.
