
Chicken Mole

1/4 cup olive oil
8 boneless skinless chicken breast halves
1 onion, chopped
1 clove garlic, minced
1 can (4 ounce size) diced green chiles
1 can (8 ounce size) tomato sauce
1 cup chicken broth
2 teaspoons chili powder
1 teaspoon salt
2 tablespoons sugar
1/4 teaspoon Tabasco sauce
2 whole cloves
1 ounce unsweetened baking chocolate, chopped
2 tablespoons creamy peanut butter
Heat the oil in a large skillet over medium-high heat. Add the chicken breasts and cook, turning as needed, until browned on both sides. Remove the chicken and keep warm.
Add the onion and garlic to the skillet. Cook, stirring occasionally, until the onion is soft. Stir in the green chiles, tomato sauce, chicken broth, chili powder, salt, sugar, tabasco, cloves, chocolate, and peanut butter. Cook, stirring, until the chocolate is melted and the ingredients are well mixed.
Add the chicken to the skillet and reduce the heat to low. Cook for 30 minutes or until the chicken is cooked through.
Serve the chicken with the mole sauce.
