
Bourbon And Brown Sugar Sweet Potatoes

6 medium sweet potatoes, scrubbed
1/2 cup brown sugar
1/4 cup cold butter, cut in small bits
1/4 cup bourbon
Preheat the oven to 350 degrees F.
Wrap the sweet potatoes in foil and place in the oven directly on the rack. Bake at 350 degrees F for 1 to 1 1/2 hours or until easily pierced with a fork. Remove the sweet potatoes from the oven. Open the foil and let the sweet potatoes cool enough to handle.
When the sweet potatoes have cooled enough, peel them and cut into cubes.
Grease a 9x13 baking dish. Place the sweet potatoes in the baking dish.
Sprinkle the sweet potatoes with the brown sugar and dot with the cut up butter. Gently pour the bourbon over the top.
Place the sweet potatoes in the oven and bake at 350 degrees F for 30-45 minutes or until the brown sugar and bourbon has slightly caramelized.
Remove the bourbon and brown sugar sweet potatoes from the oven and let stand for 15 minutes before serving.
