Ingredients: 1 tablespoon light brown sugar 1 teaspoon chili powder 1/2 teaspoon ground cumin 1/4 teaspoon salt 1/4 teaspoon freshly ground black pepper 1 pound top sirloin steak 2 teaspoons olive oil 1 cup reduced-sodium beef broth, divided 1 tablespoon tomato paste 1 chipotle chile, canned in adobo sauce, minced 1 tablespoon canned adobo sauce 1 tablespoon all-purpose flour
Directions: Combine the brown sugar, chili powder, cumin, salt, and pepper in a bowl and mix well. Rub all sides of the steak with the mixture.
Heat the olive oil in a large skillet over medium-high heat. Add the steak and cook for 3-4 minutes per side or until desired doneness. Remove the steak from the skillet and place on a serving platter. Cover lightly with foil.
Add 3/4 cup of the beef broth, the tomato paste, chipotle chile and sauce to the skillet and stir well.
Whisk together the flour and remaining beef both in a small bowl. Stir the flour mixture into the skillet and cook, stirring constantly, until the sauce thickens.
Slice the steak against the grain and place on individual serving plates. Drizzle with the chipotle sauce or serve the sauce on the side. Serve immediately.
