Ingredients: 1/2 cup dry navy beans 1/2 cup dry chickpeas (garbanzo beans) water 4 cups chicken broth 1 cup carrot, sliced 2 medium red or gold potatoes, cubed 1 tablespoon olive oil 1/2 medium onion, chopped 2 cloves garlic, chopped 2 cups diced peeled tomatoes 2 cups cabbage, sliced thin 1 zucchini, sliced 1/2 cup celery, sliced 2 teaspoons dried basil ground black pepper to taste 1/2 cup pasta
Directions: Soak beans and chickpeas overnight. Drain, rinse and place in crockpot. Add all other ingredients except pasta and cook for about 8 hours on low.
About 1/2 hour before you are going to eat cook pasta according to directions and add to soup.
Serve with a crusty bread and some cheese.
