These orange creamsicles are a perfect summer treat, and low-carb to boot. Cream, sugar-free orange gelatin, and a sugar substitute like Stevia make these pops creamy, dreamy, and guilt-free.

2 small boxes sugar free orange gelatin powder
2 packets sugar substitute
1 cup heavy cream
2 cups boiling water
1 cup crushed ice
Add 2 cups boiling water to gelatin mix as per package directions and mix well till fully dissolved.
Add crushed ice to the mixture and stir to melt ice and cool mixture. Add sweetener and heavy cream. Mix well.
Pour into freezer bowl or individual cups and chill until firm. (These can also be poured into freezer-pop holders to make true creamsicle type treats!)

I really like the flavor of this. My only issue is the texture. It was icy and crunchy instead of smooth and creamy.

I'm not sure who loved these more, me or the kids! I made them in popsicle molds.
