2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup vegetable shortening
1 cup packed light brown sugar
1 large egg
1/4 cup fresh orange juice
1 tablespoon grated orange zest
1 cup butterscotch chips
1 cup shredded coconut
directions
Preheat oven to 350 degrees F. Grease a 13- by 9-inch baking pan.
Combine the flour, baking powder, baking soda and salt.
In a large bowl, cream the vegetable shortening and brown sugar. Beat in the egg, orange juice and zest. Gradually blend in the dry ingredients. Fold in the butterscotch chips and coconut.
Spread the batter evenly in the prepared pan. Bake for 25 to 30 minutes, or until the top is a golden brown. Cool in the pan on a rack before cutting into squares.
