ingredients
3 cups baking mix
2/3 cup water
1/2 cup shredded mozzarella cheese
1/3 cup chopped ripe olives
2 tablespoons vegetable oil
1 teaspoon baking soda
1 teaspoon Italian seasoning
2 eggs
1 large tomato, chopped and drained
1/2 package (.75 ounce size) sliced pepperoni, cut in half

In a bowl, stir all ingredients until moistened. Fill paper lined muffin cups three-fourths full.
Bake at 400 degrees F for 15-18 minutes or until golden brown. Immediately remove from pan.
