Cold Chinese Gingered Cucumber

ingredients
2 large green cucumbers
2 teaspoons salt
1 tablespoon grated green ginger
1/2 cup white vinegar
3 tablespoons white sugar
directions
Wash and peel cucumbers. Score each cucumber from end to end using the tines of a fork, so that each cucumber has ridges running down it.
Slice cucumbers into thin rounds, and place in a bowl. Sprinkle with salt and mix through. Let stand for half an hour.
While cucumber is standing, combine vinegar, sugar and green ginger in a cup. Mix well.
When cucumber has stood for half an hour, drain excess liquid. Pour vinegar mixture over, stir through. Chill before serving.
