ingredients
2 medium bananas, very ripe, sliced
1/2 cup biscuit baking mix
2 whole large eggs
14 ounces sweetened condensed milk
1 tablespoon butter, melted
1 teaspoon vanilla extract
directions
Preheat oven to 400 degrees F. Spray a 9-inch pie pan with non-stick cooking spray. Set aside.
Place bananas in large mixing bowl and beat with an electric mixer on low until smooth, 1 minute.
Add remaining ingredients. Beat on low speed until the ingredients are well blended, 1 to 1 1/2 minutes longer. Using a rubber spatula, scrape the batter into prepared pie pan and smooth top.
Bake until well caramelized on top and firm around edge, but still a little soft in the center, 25 to 30 minutes. Remove from oven and let rest 30 minutes before slicing.
