Mediterranean Pot Roast Recipe

I've made this pot roast numerous times -- I love it! I use packaged sun dried tomatoes (not so messy) and a couple large quartered white onions rather than the frozen pearl onions. Don't skimp on the kalamatas ... they make the recipe.

I made this for a luncheon at work and everyone raved on and on. Instead of the kalamata olives I used a Mediterranean blend of olives and peppers.
