Chicken And Cashews In Plum Sauce

ingredients
1 tablespoon olive oil
1 pound skinless chicken strips
2 cloves garlic, crushed
4 spring onions, chopped
1/2 red capsicum
1/2 cup plum sauce
1/2 cup cashews
1 cup bean shoots
cooked white rice to serve
directions
Heat oil in a nonstick pan. Saute chicken and garlic for 5 minutes.
Add spring onions, capsicum and plum sauce. Mix well. Stir frequently for 5 minutes so chicken is thoroughly cooked. Stir in cashews and bean shoots.
Serve on a bed of hot white rice.
