Amaranth Batter Bread

ingredients
1 cup amaranth flour
1 1/2 cup brown rice flour (see NOTE) or whole wheat flour
1 tablespoon non-aluminum baking powder (such as Rumford)
1 teaspoon sea salt or kosher salt
1 cup milk, soy milk, or water
3 tablespoons brown sugar or honey
2 tablespoons vegetable oil
directions
Mix flour, baking powder and salt together and set aside.
Mix milk, brown sugar or honey and oil together with eggs if using.
Combine all ingredients and mix well. Pour batter into well-oiled 8 x 4 inch bread pan and bake at 350 degrees F for about 45 minutes. Cool for 10 minutes and remove loaf from pan, to complete cooling on a rack.

If you are using rice flour, add 2 eggs, lightly beaten
I have not made this yeast-free recipe personally, but a vegetarian friend of mine uses it and the bread is very good. It is different from wheat bread, so you may have to get used to the flavor. I do not know where my friend got the recipe.
