2 cups sugar
2/3 cup butter
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon ground nutmeg
1/2 cup flaked coconut
directions
Grease a 13- x 9- x 2-inch baking pan and set aside.
In a medium saucepan, cook and stir sugar and butter over medium heat until butter is melted, then cook and stir 2 minutes more. Cool for 10 minutes.
Using a wooden spoon, stir in eggs one at a time. Stir in vanilla. Stir in flour, baking powder and nutmeg until combined. Stir in coconut.
Spread mixture evenly into the prepared pan. Bake in a 350 degrees F oven for 25 to 30 minutes or until edges just begin to pull away from pan. Cool in pan on a wire rack.
