Vietnamese Green Papaya Salad

ingredients
Salad
4 cups shredded green papaya (or jicama to substitute)
1 cup beef jerky (yes, beef jerky, not Slim Jim brand), chopped
1/2 cup crushed peanuts
1/2 cup chopped cilantro
1 lime, juiced
Dressing
nuoc nam (Vietnamese anchovy sauce) to taste
rice vinegar to taste
chili sauce to taste
sugar to taste
water to taste
directions
Mix all of the ingredients for the dressing, according to your taste. Don't be thrown off by the anchovy sauce; it imparts a wonderful flavor.
Spoon out dressing on the bottom of the plate. On it, layer the papaya, beef jerky, peanuts, cilantro and splash the top of the salad with lime juice.
