- #30027
ingredients
4 tablespoons butter
5 cups confectioner's sugar, sifted
2 egg whites, unbeaten
2 tablespoons cream, as needed
1 1/2 teaspoon vanilla extract
1/4 teaspoon salt
orange food coloring
2 ounces unsweetened chocolate, melted
4 teaspoons cream, as needed
directions
Cream butter; add one cup of sugar gradually, blending after each addition. Add remaining sugar, alternately with egg whites then with 2 tablespoons cream until of right consistency to spread. Beat after each addition until smooth. Add vanilla and salt.
Divide frosting in two parts. To one part add orange food coloring and spread between layers of cake, reserving about 1/4 for pumpkin decoration. To remaining un-tinted frosting, add chocolate; then add 4 teaspoons cream until of spreading consistency.
Spread chocolate frosting on top and sides of cake. Decorate top as a jack-o'-lantern in the orange frosting. Makes enough frosting to cover tops and sides of two 9-inch layers and extra for decorating. Garnish with candy corn or other candies as desired.

I had a hard time reaching the consistency that I wanted. Had a great flavor, lots of "testing" spoons were used.
