Blackened Cornish Game Hen

ingredients
2 cups soy sauce
1 cup Worcestershire sauce
3/4 cup liquid honey
2 cups hot water
2 bay leaves
1 1/2 teaspoon crushed peppercorns
2 teaspoons minced fresh garlic
2 cornish game hens with back and rib cages removed
directions
Combine all ingredients except hens in a large container. Place game hens in the marinade and refrigerate for at least 4 hours. Overnight is best.
Heat barbecue to medium. Brush skin side of game hens lightly with olive oil. Put hens on grill and allow to cook for 1 minute with grill closed. Give hens a quarter turn and cook a further min., then flip hens and close the barbecue lid to cook for another 3 to 5 minutes.
Hint: You can check to see if the hens are done by prodding gently with your finger. If the meat is firm, they are done. There should be no pink showing around the joints.
