Caramelized Apple Pancakes

ingredients
1 large Granny Smith apple, peeled, cored and diced
1/4 cup apple cider
1 cup unbleached flour
1/2 cup skim milk
1/4 cup fat-free egg substitute
3 tablespoons canola oil
2 teaspoons maple syrup
1 1/2 teaspoon vanilla extract
1 1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon

In a medium no-stick frying pan over medium heat, cook the apples in the cider until all the cider evaporates and the apples brown, about 15 minutes.
In a large bowl, combine the flour, milk, eggs, oil, maple syrup, vanilla, baking soda and cinnamon. Whisk to blend (Mixture will be lumpy). Add the apples and use a spatula to fold them into the batter.
Heat a large no-stick frying pan or griddle over medium-high heat until a bead of water skips on its surface. Coat the frying pan with nonstick spray.
Pour 1/4 cup of the batter on the prepared pan. Cook until bubbles appear on the surface of the pancake and the surface appears dry. Turn and cook for about 2 minutes. Repeat until all the batter is used.
