Baked Three-Cheese Ziti

ingredients
8 ounces ziti pasta
1 tablespoon olive oil
1 cup chopped onion
2 cloves garlic, minced
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 can (15 oz size) crushed tomatoes
1 cup shredded light mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup light ricotta cheese
salt and pepper, to taste
For Topping**
2 tablespoons shredded light mozzarella cheese
2 tablespoons grated Parmesan cheese
directions
Preheat the oven to 400 degrees F. Grease a 1 1/2 quart baking dish.
Cook the ziti as directed on the package. Drain well and set aside.
While the pasta is cooking, heat the oil in a large skillet over medium heat. Add the onion and garlic and cook for 3-4 minutes, stirring frequently, until the onion is soft. Add the basil, oregano, and tomatoes. Bring just to a boil then reduce the heat to a simmer. Let cook, stirring occasionally, for 5 minutes.
In a bowl, combine the mozzarella, parmesan, and ricotta in a large bowl. Add the pasta and tomato sauce mixture and mix well to combine. Season as desired with salt and pepper.
Place the pasta mixture in the prepared baking dish. Evenly sprinkle the remaining cheese over the top.
Place the pan in the oven and bake at 400 degrees F for 15-20 minutes or until the cheese is melted and the pasta is heated through.
Remove from the oven, let stand for 3-4 minutes, then serve immediately.

This is a great recipe! I have used it a couple of times, however, I have substituted the diced tomatoes for Marinara sauce. Delicious!!
