Creamy Cucumber Salad Dressing

Use this creamy cucumber salad dressing on your favorite salad or use it as a dip with chips or vegetables.
ingredients
1 cup mayonnaise
1 clove garlic, minced
2 tablespoons minced fresh parsley
1 tablespoon minced scallions
1 cup plain yogurt
1 cup peeled, seeded, and minced cucumber
salt and pepper, to taste
directions
Combine the mayonnaise, garlic, parsley, scallions, and yogurt in a bowl. Mix well. Stir in the cucumbers. Season to taste with salt and pepper.
Cover the bowl and chill well before serving.

This was so easy to make and very delicious. I didn't have scallions so I exchanged red onion. I also added one clove of garlic. The other change I made is I pureed the mixture in my food processor. This was great on salad or as a dip for pita chips.

I was trying to recreate and wonderful recipe for Celebration's (Dallas) Creamy Cucumber Dressing. This is as close as I can find. It is really wonderful on a classic tossed green salad. I did add just a dash or two of cayenne pepper for a little pop.
